Easy and Creative Meals While On The Road

We love tasty meals, and it’s even better when they are quick and easy! We put together a list of our favorite and most creative meals. We’ve made these while camping outdoors or even while traveling in a van. While we do eat a lot of eggs, wraps, stir-fries, tacos, etc. we wanted to focus on the more creative meals we eat on our trips.

BBQ Chicken Quesadillas

This is definitely one of our favorite meals! It’s super easy and filling especially after a long day of exploring.

Ingredients:

  • Tortillas

  • Shredded Chicken

  • Bell Peppers

  • Green Onion

  • Shredded Cheese

  • Cilantro

  • BBQ

Instructions:

  1. Toss the shredded chicken, bell peppers, and green onion into a pan and stir.

  2. After a couple minutes, add a small portion of shredded cheese and your choice of BBQ sauce without stirring.

  3. Once cooked, remove the chicken mixture from the pan and put into a bowl. Cover to keep warm.

  4. With the same pan, put a tortilla on, sprinkle with more cheese, and top half of the tortilla with a portion of the chicken mixture. Top the mixture with cilantro and/or extra green onion.

  5. Once the tortilla is crispy on the bottom, flip the empty side over the top of the chicken mixture.

  6. Serve and enjoy!

Campfire Nachos

We LOVE nachos, but campfire nachos? EVEN BETTER!

This is a super easy meal to make on the grill or our preferred way of over the campfire. You can really put any topping you want on these nachos and include any type of meat or no meat. We just list out what we have added on in the past below.

Ingredients:

  • Tortilla Chips

  • Baby Tomatoes

  • Mushrooms

  • Ham

  • Shredded Cheese

  • Jalapeno

Instructions:

  1. Layer the pan with tortilla chips.

  2. Add whatever nacho toppings you want on top of the nachos. Top with cheese.

  3. Let cook for a couple minutes. Once the chips start to crisp up and the cheese is melted is a good sign that it’s ready to serve!

Fancy Ramen

We love the juiciness of ramen which is why this is another fav, but we had to figure out how to make our meal more exciting. So we added a couple ingredients to spice it up. You can add anything you’d like, similar to the nachos. We just noted what we’ve added below.

Ingredients:

  • Ramen

  • Bell Peppers

  • Green Onion

  • Spicy Sausage

  • Boiled Egg (not shown above but a great addition!)

Instructions:

  1. Add the ramen to boiling water.

  2. At the same time, sauté your toppings.

  3. Stir in your preferred toppings to the ramen (we recommend leaving some green onion for use as a garnish).

  4. Remove from heat and serve. Enjoy slurping up all the juicy goodness!

Chickpea Salad Wraps

We’ve always enjoyed chickpeas, but never knew how to best use them. Here comes.. chickpea salad wraps! Even better if served with a view ;)

Ingredients:

  • Tortillas

  • Lettuce

  • Chickpeas

  • Mayo

  • Celery

Instructions:

  1. Prep by cutting up the celery and peeling some leaves of lettuce.

  2. In a bowl, mash the chickpeas and add mayo until creamy. Stir in the cut celery, salt & pepper to taste.

  3. On a tortilla, add lettuce and the chickpea mixture.

  4. Wrap up and enjoy!
